I think the block wall is a great system as it lets you add some "man made" areas to a cavern to make it look like someone was ambitious enough to carve out a place for him or herself. The cavern floors are really cool. I don't know about the fieldstone... it looks alright but don't know if it would be more useful than the plain floors.
